Step-by-Step Instructions
  1. In a large pot or skillet, melt 2 tablespoons of salted butter over medium heat until frothy.
  2. Add one finely chopped sweet onion and 2 minced garlic cloves. Sprinkle in 1 teaspoon of Italian seasoning, 0.5 teaspoon of garlic powder, the zest of one lemon, and a pinch of red pepper flakes. Sauté for about 3-4 minutes.
  3. Stir in 8 ounces of short-cut pasta, ensuring it's well coated with the mixture.
  4. Grate 2 medium zucchinis and add them with 4 cups of broth. Season with salt and black pepper. Bring to a boil and simmer for 8-10 minutes until al dente.
  5. Stir in 1 cup of ricotta, 0.5 cup of Parmesan, the juice of one lemon, and fresh basil. Cook for another 1-2 minutes.
