Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup warm water about 110°F
  • 1 packet 2 1/4 teaspoons active dry yeast
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup lemon juice freshly squeezed
  • Zest of 2 lemons
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Method
 

  1. In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  4. Preheat your oven to 475°F (245°C).
  5. Roll out the risen dough on a floured surface to your desired thickness, then transfer it to a pizza stone or baking sheet.
  6. In a bowl, mix the ricotta cheese, lemon juice, lemon zest, garlic powder, and black pepper until smooth. Spread this mixture evenly over the pizza dough.
  7. Sprinkle the grated Parmesan cheese and shredded mozzarella cheese on top of the ricotta mixture.
  8. Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before slicing and serving.
