- In a small bowl, whisk together ¼ cup of extra virgin olive oil, the juice of two lemons, 2 minced garlic cloves, 1 tablespoon of oregano, and salt and pepper to taste.
- Place salmon fillets in a shallow dish or resealable bag, pour the marinade over, ensuring each piece is coated. Refrigerate for at least 15 minutes.
- Preheat the grill to medium-high heat (375°F to 400°F), about 10 to 15 minutes.
- Remove salmon from marinade, allowing excess to drip off. Place skin-side down on the grill and cook for 4 to 5 minutes until the skin is crisp.
- Carefully flip the fillets and grill another 4 to 5 minutes until opaque, reaching an internal temperature of 145°F.
- Transfer to a serving platter, garnish with fresh lemon slices and parsley. Drizzle additional lemon juice to serve.
