Ingredients
  

  • 8 oz pasta penne or fettuccine
  • 2 chicken breasts sliced thinly
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Cook pasta according to package directions and set aside.
  2. Heat olive oil in a skillet and cook chicken until golden and cooked through. Set aside.
  3. In the same skillet, melt butter and sauté garlic for 1 minute.
  4. Add heavy cream, lemon juice, zest, and Parmesan cheese.
  5. Simmer until slightly thickened.
  6. Add cooked pasta and chicken to the sauce, tossing to coat.
  7. Season with salt and pepper and garnish with parsley.

Notes

  • Use lemon zest for extra brightness
  • Add spinach or peas for color
  • Substitute with half-and-half for a lighter sauce
