Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, cream butter and sugar until fluffy. Add egg, lemon zest, juice, and vanilla.
- Mix in flour, baking powder, and salt until a soft dough forms.
- Chill dough for 20–30 minutes.
- Scoop dough, roll into balls, and coat in powdered sugar.
- Place on baking sheet and bake for 10–12 minutes.
- Let cool on the pan for a few minutes before transferring.

- Chill dough to prevent spreading.
- For more lemon flavor, add lemon extract or extra zest.
