  • 1 tbsp Vegetable Oil can use olive oil
  • 1 medium Sweet Onion chopped
  • 6 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated, or use ground ginger
  • 2 tbsp Gochujang Korean fermented chili paste
  • ¼ cup Brown Sugar for sweetness
  • ½ cup Soy Sauce for umami flavor
  • 2 cups Beef Broth vegetable broth for vegetarian option
For Serving
  • 4 cups Cooked Rice white or brown
  • Fresh Cilantro optional garnish
  • Kimchi traditional side

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat a tablespoon of vegetable oil over medium-high heat. Sear the beef chuck roast for about 5-7 minutes until browned.
  3. Remove the beef and sauté chopped sweet onion, minced garlic, and grated fresh ginger for 2-3 minutes.
  4. Stir in gochujang, brown sugar, soy sauce, and beef broth. Mix for 1-2 minutes until combined.
  5. Return the beef to the pot, cover, and bake for 3-4 hours until fork-tender.
  6. Let the pot roast rest for 10 minutes, slice, and serve over cooked rice with cilantro and kimchi.
