  • 8 oz Cream Cheese softened
  • 6 slices Bacon cooked and crumbled; consider turkey bacon as alternative
  • 2 cups Fresh Baby Spinach thaw and drain if using frozen
  • 1 tbl Bacon Grease or Olive Oil for sautéing spinach
  • 2 cloves Minced Garlic fresh enhances flavor
  • 1 tsp Sea Salt adjust according to taste
  • 1/2 tsp Cracked Black Pepper can use white pepper for a softer flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Divide the shredded mozzarella cheese into 8 equal portions and shape each into flat discs on the baking sheet.
  3. Bake the cheese discs for 8-10 minutes until edges turn golden brown and centers bubble. Let cool briefly.
  4. Heat a skillet over medium heat and add bacon grease or olive oil. Sauté spinach with minced garlic for 2-3 minutes until wilted.
  5. In a mixing bowl, combine softened cream cheese, cooked bacon, sautéed spinach, sea salt, and cracked black pepper. Mix well.
  6. Place a tablespoon of the creamy filling in the center of each cheese disc and roll into a log shape.
  7. Let the assembled roll ups cool completely at room temperature before serving.
