- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Divide the shredded mozzarella cheese into 8 equal portions and shape each into flat discs on the baking sheet.
- Bake the cheese discs for 8-10 minutes until edges turn golden brown and centers bubble. Let cool briefly.
- Heat a skillet over medium heat and add bacon grease or olive oil. Sauté spinach with minced garlic for 2-3 minutes until wilted.
- In a mixing bowl, combine softened cream cheese, cooked bacon, sautéed spinach, sea salt, and cracked black pepper. Mix well.
- Place a tablespoon of the creamy filling in the center of each cheese disc and roll into a log shape.
- Let the assembled roll ups cool completely at room temperature before serving.
