  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper any color, diced
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup salami diced
  • 1/2 cup mozzarella balls halved
  • 1/4 cup fresh parsley chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, bell pepper, Kalamata olives, salami, mozzarella balls, and parsley. Toss gently to mix all the ingredients evenly.
  2. In a small bowl, whisk together the red wine vinegar, olive oil, dried oregano, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss again to coat all the ingredients evenly.
  4. Sprinkle the grated Parmesan cheese on top before serving.
  5. For best flavor, let the salad sit for about 10 minutes to allow the ingredients to marinate in the dressing.
