- Carefully slice the pears in half lengthwise and remove the seeds.
- Arrange the halved pears cut-side up on a baking sheet lined with parchment paper.
- Brush the cut sides with melted butter and squeeze fresh lemon juice over them.
- Roast the pears for 20-25 minutes until tender and caramelized.
- Flip each pear half so the cut side is facing up again and drizzle with lemon juice.
- Sprinkle the blue cheese over the pears, add chopped walnuts, and drizzle with honey.
- Return to the oven for an additional 5 minutes.
- Remove from oven, let cool slightly, and garnish with thyme before serving.
