  • ¼ cup freshly squeezed lime juice
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon brown sugar Honey can be used as a substitute.
  • 2 teaspoons dried thyme
  • 2 teaspoons ground nutmeg
  • 2 teaspoons cinnamon
  • 2 teaspoons allspice
  • 2 teaspoons ginger
  • 2 teaspoons kosher salt
  • teaspoons ground black pepper

  1. Prep Chicken: Prepare your chicken for the marinade. If using bone-in pieces, poke holes in the meat for better flavor absorption or pound boneless pieces to ensure even cooking. Pat the chicken dry with paper towels.

  2. Make Marinade: In a blender, combine green onion, chopped garlic, jalapeños, lime juice, olive oil, brown sugar, thyme, nutmeg, cinnamon, allspice, ginger, salt, and pepper. Blend until smooth.
