- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground ginger, 1 teaspoon of cinnamon, ¼ teaspoon of nutmeg, and ½ teaspoon of salt. Whisk until blended.
- In another bowl, whisk together ½ cup of melted unsalted butter, ½ cup of raw honey, and 3 large eggs until smooth.
- Stir in ½ cup of freshly squeezed orange juice, the zest from 2 oranges, and 2 tablespoons of grated fresh ginger into your wet mixture.
- Gradually fold the dry ingredients into the wet mixture using a spatula, mixing just until no more flour is visible.
- Pour the batter into your prepared cake pan, smoothing the top. Bake for about 40-45 minutes.
- To make the optional glaze, mix together 1 tablespoon of honey and 1 tablespoon of orange juice.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
