Preparation
- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by greasing it lightly with coconut oil and lining with parchment paper.
- In a large mixing bowl, add grated carrots, eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract and blend using a handheld mixer until combined.
- In a separate bowl, whisk together oat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and sea salt.
- Gently fold the dry mixture into the wet ingredients until just incorporated.
- Pour the batter into the prepared baking pan and bake for 20-25 minutes, or until a toothpick comes out clean.
- Allow the cake to cool in the pan for about 30 minutes before transferring it to a wire rack.
- In a mixing bowl, beat together Neufchatel cheese, additional Greek yogurt, maple syrup, and sea salt until smooth to prepare the frosting.
- Once the cake is cool, spread the frosting generously on top.
