For the Cake
  • 2 cups Grated Carrots About 2-3 large carrots when grated.
  • 2 large Eggs Can substitute with flax eggs for a vegan option.
  • 1/2 cup Maple Syrup Acts as a natural sweetener.
  • 1/3 cup Coconut Oil Can be substituted with neutral oil.
  • 1 cup Plain Greek Yogurt Use full-fat for best taste.
  • 1 teaspoon Vanilla Extract Opt for pure vanilla.
  • 1 cup Oat Flour Ensure it's gluten-free.
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Sea Salt
For the Frosting
  • 8 oz Neufchatel Cheese Lower in fat than cream cheese.
  • 1/2 cup Additional Greek Yogurt
  • 2 tablespoons Maple Syrup (for frosting) Naturally sweetens the frosting.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by greasing it lightly with coconut oil and lining with parchment paper.
  2. In a large mixing bowl, add grated carrots, eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract and blend using a handheld mixer until combined.
  3. In a separate bowl, whisk together oat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and sea salt.
  4. Gently fold the dry mixture into the wet ingredients until just incorporated.
  5. Pour the batter into the prepared baking pan and bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Allow the cake to cool in the pan for about 30 minutes before transferring it to a wire rack.
  7. In a mixing bowl, beat together Neufchatel cheese, additional Greek yogurt, maple syrup, and sea salt until smooth to prepare the frosting.
  8. Once the cake is cool, spread the frosting generously on top.
