For the Filling
  • 15 ounces Ricotta Cheese Drained
  • ¾ cup Powdered Sugar Substitute with coconut sugar for a healthier alternative
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Cinnamon
  • ½ cup Mini Chocolate Chips Dark chocolate can enhance richness
For the Crust
  • 2 packs Pre-made Pie Crust Homemade for a fresh taste recommended
  • 1 large Egg For wash
  • 1 tablespoon Sugar For sprinkling
Optional Garnishes
  • ¼ cup Chopped Pistachios For color and nutty flavor
  • 4 pieces Maraschino Cherries For extra sweetness on top
  • ½ cup Extra Chocolate Chips For sprinkling

Equipment

  • 9x9-inch baking dish
  • Mixing bowl
  • Spatula

Method

Preparation Steps
  1. In a large mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips. Stir until smooth and creamy.
  2. Preheat your oven to 375°F (190°C).
  3. Roll out your pre-made pie crust to fit into a 9x9-inch baking dish. Press it into the bottom, ensuring it's even.
  4. Spread the creamy ricotta mixture evenly over the crust, leaving a small border at the edges.
  5. Roll out a second pie crust to cover the filling completely, sealing the edges by crimping them. Brush with beaten egg and sprinkle sugar over the top.
  6. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the filling is set.
  7. Remove from the oven and let cool for about 30 minutes before cutting into squares.
