Step-by-Step Instructions
  1. In a medium bowl, combine creamy natural peanut butter, sriracha, both soy sauces, brown sugar, rice wine vinegar, and warm water. Whisk until smooth.
  2. Bring a large pot of water to a boil and add a pinch of salt. Cook the rice noodles according to package instructions (6-8 minutes) until al dente. Drain and rinse under cold water.
  3. Heat oil in a large skillet over low heat. Add minced garlic and ginger, sautéing for about 1 minute until fragrant.
  4. Lower heat, add noodles to skillet, and pour peanut sauce over. Toss for 2-3 minutes until well combined. Add water if mixture appears dry.
  5. Serve immediately topped with crushed peanuts, chopped green onions, and drizzle with sriracha or chili oil if desired.
