Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Season the bone-in chicken thighs with onion powder, garlic powder, smoked paprika, fresh thyme, fresh rosemary, salt, and pepper.
  3. Heat a large oven-safe skillet over medium-high heat and add olive oil. Sear chicken thighs skin-side down for 5-7 minutes until golden brown.
  4. Flip the chicken thighs and scatter sliced red onions and Honeycrisp apples around them in the skillet.
  5. Transfer the skillet to the oven and roast for 25-30 minutes until chicken reaches 165°F (74°C).
  6. Remove from oven and let the chicken rest covered with foil for 10 minutes.
  7. Add salted butter to the skillet with drippings, then stir in apple cider, chicken broth, Dijon mustard, and minced garlic.
  8. Taste and adjust seasoning before serving the sauce over the chicken.
