Preparation Steps
- Preheat your oven to 400°F (200°C).
- Season the bone-in chicken thighs with onion powder, garlic powder, smoked paprika, fresh thyme, fresh rosemary, salt, and pepper.
- Heat a large oven-safe skillet over medium-high heat and add olive oil. Sear chicken thighs skin-side down for 5-7 minutes until golden brown.
- Flip the chicken thighs and scatter sliced red onions and Honeycrisp apples around them in the skillet.
- Transfer the skillet to the oven and roast for 25-30 minutes until chicken reaches 165°F (74°C).
- Remove from oven and let the chicken rest covered with foil for 10 minutes.
- Add salted butter to the skillet with drippings, then stir in apple cider, chicken broth, Dijon mustard, and minced garlic.
- Taste and adjust seasoning before serving the sauce over the chicken.

For extra crispy skin, pat chicken thighs dry before seasoning. If using dried herbs, use 1/3 the amount to avoid overpowering the dish.
