  • 4 pieces Bone-in Chicken Legs
  • 4 pieces Bone-in Chicken Thighs
For the Sauce
  • 2 tablespoons Olive Oil
  • 1 large Brown/Yellow Onion
  • 2 medium Roma Tomatoes
  • 4 cloves Garlic Cloves
  • 4 pieces Dried Guajillo Chiles
  • 1 piece Dried Ancho or Chipotle Chile optional
  • 1 piece Dried Pasilla or New Mexico Chiles optional
  • 2 cups Chicken Broth preferably low-sodium
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Sea Salt or Kosher Salt adjust to taste
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Dried Coriander optional
  • 1/4 teaspoon Ground Cloves optional
  • 2 pieces Bay Leaves
For Garnish and Serving
  • 1/4 cup Chopped Cilantro optional
  • to taste White Rice, Spanish Rice, Corn or Flour Tortillas, Avocado for serving

Method
 

Step-by-Step Instructions
  1. Prepare the Chicken: Pat chicken thighs and legs dry, season with sea salt and black pepper, and set aside.
  2. Make the Adobo Sauce: Heat olive oil, add onion and tomatoes, sauté, then stir in garlic and chiles.
  3. Blend the Sauce: Simmer the sauce, then blend until smooth and return to pot with spices.
  4. Brown the Chicken: In same pot, brown chicken pieces skin-side down, then flip and brown the other side.
  5. Simmer the Chicken: Pour adobo sauce over chicken, add bay leaves, cover and simmer or bake.
  6. Final Touches and Serve: Remove bay leaves, adjust seasoning, ladle sauce over chicken, and garnish to serve.
