Preparation Steps
  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until well blended. Press into the bottom of a 9-inch springform pan to create a crust and bake for 8–10 minutes until golden. Cool completely.
  2. Lower the oven temperature to 325°F (163°C). In a bowl, beat cream cheese and sugar until smooth, about 2–3 minutes. Add eggs one at a time, mixing well after each addition. Fold in vanilla and mashed bananas until combined. Pour filling over the cooled crust and smooth top.
  3. Bake the cheesecake for 50–60 minutes until edges are set but the center has a slight jiggle. Turn off oven and let cool inside for 1 hour, then refrigerate for at least 4 hours or overnight.
  4. Whisk together instant pudding mix and cold milk until thickened, about 2 minutes. Spread this layer on top of the set cheesecake, then dollop with whipped cream. Garnish with banana slices and crushed graham crackers.
  5. Slice the cheesecake into wedges and serve chilled. Enjoy this delightful dessert with coffee or tea.
