Prepare the Caramel
- In a medium saucepan, combine sugar, water, and a pinch of salt over medium heat. Cook without stirring until golden brown, about 8-10 minutes. Quickly pour into a loaf pan and let it cool.
Sauté the Apples
- Melt vegan butter in a skillet over medium heat, add diced apples and cinnamon. Sauté for 5 to 7 minutes until tender.
Make the Custard
- Preheat oven to 350°F (175°C). Whisk almond milk, maple syrup, sugar, cornstarch in a saucepan over medium heat until thickened, about 5 minutes. Fold in sautéed apples.
Combine & Bake
- Pour apple-custard mixture over the caramel in the loaf pan. Place in a larger baking dish filled with hot water and bake for about 40 minutes, until set.
Cool and Refrigerate
- Let flan cool at room temperature for 30 minutes. Cover and refrigerate for at least 4 hours.
Serve Your Flan
- Run a knife around the edges and invert onto a serving plate. Slice and serve chilled.
