Baking Instructions
- Preheat your oven to 350°F (177°C) and prepare a 9-inch springform pan with non-stick spray and parchment paper.
- Peel and dice the Honeycrisp apples into bite-sized pieces and mix with lemon juice and granulated sugar.
- In a bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- Beat butter and sugar in a stand mixer until light and fluffy, around 2 minutes.
- Add eggs one at a time, mixing in vanilla extract until fully blended.
- Gently mix dry ingredients into the wet mixture until just combined.
- Fold in the apple mixture, then transfer the batter to the prepared pan. Sprinkle turbinado sugar on top.
- Bake for 1 hour to 1 hour 15 minutes, covering with foil after 30 minutes.
- Cool in the pan for 10 minutes, then release the sides and let the cake cool completely.
Custard Sauce Instructions
- Set a heat-proof bowl over ice water and whisk together sugar, egg yolks, and salt.
- Heat milk and cream in a saucepan over medium-low heat until steaming.
- Gradually whisk the steaming milk into the egg yolk mixture, then return to saucepan over low heat, stirring constantly.
- Cook for about 8 to 10 minutes until the custard thickens enough to coat the back of a spoon.
- Strain the custard through a fine sieve into a bowl over ice water and let it cool completely.
