Method
 

Baking Instructions
  1. Preheat your oven to 350°F (177°C) and prepare a 9-inch springform pan with non-stick spray and parchment paper.
  2. Peel and dice the Honeycrisp apples into bite-sized pieces and mix with lemon juice and granulated sugar.
  3. In a bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Beat butter and sugar in a stand mixer until light and fluffy, around 2 minutes.
  5. Add eggs one at a time, mixing in vanilla extract until fully blended.
  6. Gently mix dry ingredients into the wet mixture until just combined.
  7. Fold in the apple mixture, then transfer the batter to the prepared pan. Sprinkle turbinado sugar on top.
  8. Bake for 1 hour to 1 hour 15 minutes, covering with foil after 30 minutes.
  9. Cool in the pan for 10 minutes, then release the sides and let the cake cool completely.
Custard Sauce Instructions
  1. Set a heat-proof bowl over ice water and whisk together sugar, egg yolks, and salt.
  2. Heat milk and cream in a saucepan over medium-low heat until steaming.
  3. Gradually whisk the steaming milk into the egg yolk mixture, then return to saucepan over low heat, stirring constantly.
  4. Cook for about 8 to 10 minutes until the custard thickens enough to coat the back of a spoon.
  5. Strain the custard through a fine sieve into a bowl over ice water and let it cool completely.
