- In a mixing bowl, combine Greek yogurt, peanut butter, and sweetener. Blend until smooth and creamy, about 1-2 minutes.
- Fold in chocolate chips into the yogurt and peanut butter mixture until evenly distributed.
- Line a baking tray with parchment paper. Drop spoonfuls of the mixture onto the tray, spacing them apart.
- Insert a popsicle stick into each formed bar. Smooth tops if needed.
- Sprinkle chopped peanuts on top if desired. Press them lightly into the mixture.
- Freeze for 2-3 hours until firm.
- Melt chocolate chips in a microwave or double boiler, adding coconut oil for a smoother texture.
- Dip each frozen bar into melted chocolate to coat all sides. Set them back onto the parchment-lined tray.
- Return the coated bars to the freezer for another 30 minutes to set the chocolate.
