Step-by-Step Instructions
  1. In a mixing bowl, combine Greek yogurt, peanut butter, and sweetener. Blend until smooth and creamy, about 1-2 minutes.
  2. Fold in chocolate chips into the yogurt and peanut butter mixture until evenly distributed.
  3. Line a baking tray with parchment paper. Drop spoonfuls of the mixture onto the tray, spacing them apart.
  4. Insert a popsicle stick into each formed bar. Smooth tops if needed.
  5. Sprinkle chopped peanuts on top if desired. Press them lightly into the mixture.
  6. Freeze for 2-3 hours until firm.
  7. Melt chocolate chips in a microwave or double boiler, adding coconut oil for a smoother texture.
  8. Dip each frozen bar into melted chocolate to coat all sides. Set them back onto the parchment-lined tray.
  9. Return the coated bars to the freezer for another 30 minutes to set the chocolate.
  10. Remove the bars once the chocolate shell is set and serve as a delightful dessert.
