Step-by-Step Instructions for Cherry Pistachio Cheesecake
  1. Preheat your oven to 325°F (160°C) and prepare your springform pan.
  2. In a medium bowl, combine graham cracker crumbs, ground pistachios, granulated sugar, and melted butter.
  3. Press the crumb mixture into the bottom of the springform pan and bake for 8 minutes.
  4. Beat the cream cheese and sugar until smooth, then mix in the eggs, sour cream, pudding mix, and vanilla.
  5. Pour the filling over the cooled crust and bake for 45-50 minutes.
  6. Cool in the oven for 1 hour with the door slightly open.
  7. Chill the cheesecake in the refrigerator for at least 4 hours, preferably overnight.
  8. Spread cherry pie filling over the cheesecake and sprinkle with chopped pistachios before serving.
