Step‑by‑Step Instructions
  1. In a large bowl, combine coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, lime juice, turmeric powder, and chili powder. Whisk until well blended. Add the chicken thighs, ensuring they are thoroughly coated. Marinate for at least 30 minutes, ideally overnight.
  2. Preheat your air fryer to 375°F (190°C) or heat a stovetop pan over medium-high heat. Remove the marinated chicken from the fridge, shaking off excess marinade.
  3. Place the marinated chicken thighs in the air fryer or stovetop pan. Cook for about 6-7 minutes per side, until golden brown and reaching an internal temperature of 165°F (74°C).
  4. Once cooked, let the chicken rest for a couple of minutes, then garnish with freshly chopped coriander. Serve warm over jasmine rice or your favorite sides.
