- In a large bowl, combine coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, lime juice, turmeric powder, and chili powder. Whisk until well blended. Add the chicken thighs, ensuring they are thoroughly coated. Marinate for at least 30 minutes, ideally overnight.
- Preheat your air fryer to 375°F (190°C) or heat a stovetop pan over medium-high heat. Remove the marinated chicken from the fridge, shaking off excess marinade.
