- In a small bowl, combine honey, hot sauce, and chili flakes. Heat gently until warm, then set aside.
- Slice each chicken breast horizontally to create four thinner cutlets.
- Combine all seasoning ingredients in a bowl and mix well.
- Prepare three shallow dishes with seasoned flour, beaten eggs, and Panko breadcrumbs.
- Dredge each chicken cutlet in flour, then eggs, then breadcrumbs. Set aside.
- Heat oil in a skillet and fry cutlets for 3-4 minutes on each side until golden brown.
- Remove chicken and crumble feta cheese over each piece. Broil for 2-3 minutes until melted.
- Drizzle warm hot honey mixture over the chicken and serve warm.
