Ingredients
  

For the Chicken:
  • 1 lb boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 eggs beaten
  • 2 tablespoons vegetable oil for frying
For the Hot Honey Sauce:
  • 1/3 cup honey
  • 2 tablespoons hot sauce adjust to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon red pepper flakes optional, for extra heat
  • 1 clove garlic minced
For the Bowls:
  • 2 cups cooked rice white or brown
  • 1 cup shredded carrots
  • 1 cup cucumber slices
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds optional
  • Lime wedges for serving

Method
 

Prepare the Chicken:
  1. In a bowl, mix flour, cornstarch, salt, pepper, paprika, and garlic powder.
  2. Dip chicken pieces into the beaten eggs, then dredge in the flour mixture until fully coated.
Cook the Chicken:
  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Fry the chicken pieces in batches for 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.
Make the Hot Honey Sauce:
  1. In a small saucepan, combine honey, hot sauce, soy sauce, apple cider vinegar, minced garlic, and red pepper flakes.
  2. Heat over medium heat until bubbling, stirring occasionally. Simmer for 2-3 minutes, then remove from heat.
Toss the Chicken:
  1. Add the fried chicken pieces to a large bowl and pour the hot honey sauce over them.
  2. Toss to coat evenly.
Assemble the Bowls:
  1. Divide cooked rice among bowls.
  2. Top with hot honey chicken, shredded carrots, cucumber slices, green onions, and sesame seeds.
  3. Serve with lime wedges on the side.
