Method
- Preheat oven to 325°F
- Layer buttered phyllo sheets and pistachios in a springform pan
- Mix cream cheese, sugar, eggs, and vanilla, then pour over the phyllo layers
- Bake for 50–60 minutes or until set
- Simmer honey, water, and lemon juice to make syrup
- Pour syrup over cheesecake while still warm
- Cool completely before serving
Notes
- Use walnuts or a mix of nuts if desired
- Syrup can be infused with rose water for a floral note
- Best made a day ahead to let flavors meld
