Method
- Place chicken breasts in the crockpot.
- In a bowl, whisk together brown sugar, soy sauce, vinegar, ginger, garlic, and red pepper flakes. Pour over chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
- Remove chicken and shred or slice.
- In a small bowl, mix cornstarch and water, then stir into the sauce. Cook on high for 15 minutes to thicken.
- Return chicken to crockpot, stir to coat, then serve with rice and garnish.
Notes
- You can use chicken thighs for a juicier result. Adjust sweetness by reducing brown sugar slightly if preferred. Leftovers are great for meal prep.
