 Sweet, savory, and oh-so-satisfying — this honey garlic chicken and veggies skillet is a quick one-pan dinner with big flavor and minimal cleanup.

Ingredients
  

  • 1 ½ lbs chicken thighs or breasts cut into chunks
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 red bell pepper chopped
  • 1 zucchini sliced
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 4 garlic cloves minced
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch mixed with 1 tbsp water

Method
 

  1. In a skillet, heat oil and cook chicken until browned.
  2. Add vegetables and sauté until just tender.
  3. In a bowl, mix honey, soy sauce, garlic, and vinegar.
  4. Pour sauce into skillet, add slurry, and stir until sauce thickens.
  5. Serve with rice or quinoa.

Notes

  • Try adding snap peas or mushrooms for extra texture.
