Step-by-Step Instructions
  1. In a large mixing bowl, combine your ground beef or lamb with grated onion, minced garlic, yogurt, tomato paste, salt, pepper, paprika, cumin, oregano, and olive oil. Mix well using your hands until the mixture becomes sticky and homogeneous, taking about 3-5 minutes.
  2. Once the mixture is well-combined, divide it into five equal portions. Lay a piece of parchment paper on your work surface, and place one portion of the meat in the center. Using a rolling pin, roll it out into a thin rectangle, about ¼-inch thick.
  3. Carefully lift the parchment paper and peel off the top layer. Tightly roll the meat rectangle into a log shape, using the bottom parchment to assist.
  4. Preheat your oven to 400°F (200°C). Place the rolled meat log on a baking sheet lined with parchment paper. Bake for about 20-25 minutes, or until golden brown and crispy.
  5. After baking, remove the kebab from the oven and let it rest for 5 minutes. Thinly slice the log into bite-sized pieces and serve inside warm pita or tortillas, topped with desired toppings.
