Ingredients
  

  • 12 large eggs
  • 1 cup cottage cheese
  • ½ cup diced yellow onion
  • 1 cup chopped spinach
  • ½ cup diced cherry tomatoes
  • ½ cup diced zucchini
  • 1 cup shredded Parmesan cheese divided
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Preheat the Oven – Set oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Prepare the Egg Mixture – In a large bowl, whisk together eggs and cottage cheese until smooth.
  3. Add Vegetables and Seasoning – Stir in onion, spinach, tomatoes, zucchini, ¾ cup Parmesan cheese, garlic powder, salt, and black pepper. Mix well.
  4. Pour into Baking Dish – Spread the mixture evenly into the greased dish and sprinkle the remaining Parmesan cheese on top.
  5. Bake – Place in the oven and bake for 30-35 minutes, or until the center is set and the top is golden brown.
  6. Serve and Enjoy – Let cool for a few minutes, then slice and serve warm.
