Ingredients
  

  • 3 bone-in skin-on chicken breasts (about 2.5 pounds total)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme chopped (or 1 teaspoon dried)
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon sliced
  • 1 cup chicken broth

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together the olive oil, rosemary, thyme, garlic, salt, and black pepper to create a marinade.
  3. Pat the chicken breasts dry with paper towels. Rub the marinade all over the chicken, making sure to get some under the skin for extra flavor.
  4. Place the chicken breasts in a roasting pan and arrange the lemon slices around them. Pour the chicken broth into the bottom of the pan.
  5. Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.
  6. Remove the chicken from the oven and let it rest for 5-10 minutes before serving. This allows the juices to redistribute.
