Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan.
  2. Cream together unsalted butter and granulated sugar until fluffy, about 3-5 minutes.
  3. Mix in oil, then add eggs one at a time, followed by Greek yogurt and vanilla extract.
  4. In a separate bowl, sift together flour, baking powder, baking soda, and salt before folding into wet mixture.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
  6. Prepare the strawberry sauce by combining strawberry puree and sugar in a saucepan, then thicken with cornstarch mixture.
  7. Poke holes in the baked cake and pour strawberry sauce over it while it's still warm.
  8. Whip together heavy cream, mascarpone, and powdered sugar until soft peaks form.
  9. Spread whipped topping over cooled cake and garnish with more sauce and fresh strawberries.
