Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Lightly spray a baking sheet with nonstick cooking spray.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, salt, and cinnamon.
  3. In a medium bowl, combine melted butter and sugar, whisk until smooth. Mix in egg, vanilla extract, and applesauce.
  4. Carefully add the dry mixture to the wet bowl, stirring gently until just combined. Fold in diced apples.
  5. Scoop mounds of the batter onto the prepared baking sheet, leaving space between each scoop.
  6. Bake the fritters for about 10 minutes, or until lightly golden on the edges.
