- Preheat your oven to 400°F (200°C). Lightly spray a baking sheet with nonstick cooking spray.
- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, salt, and cinnamon.
- In a medium bowl, combine melted butter and sugar, whisk until smooth. Mix in egg, vanilla extract, and applesauce.
- Carefully add the dry mixture to the wet bowl, stirring gently until just combined. Fold in diced apples.
- Scoop mounds of the batter onto the prepared baking sheet, leaving space between each scoop.

- While baking, prepare the glaze by whisking powdered sugar with apple cider until smooth.
