Ingredients
  

  • 1 lb stew beef cubed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 4 cups beef broth
  • 2 cups water
  • 3 carrots sliced
  • 3 potatoes diced
  • 1 cup green beans
  • 1 cup corn kernels
  • 1 can 14.5 oz diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Heat oil in a pot and brown the beef. Set aside.
  2. Sauté onion and garlic until soft.
  3. Add beef, broth, water, tomatoes, and seasonings.
  4. Bring to a boil, then reduce heat and simmer for 1 hour.
  5. Add carrots, potatoes, green beans, and corn. Cook until veggies are tender, about 30 minutes.
  6. Taste and adjust seasoning. Serve hot.

  • Freeze leftovers for up to 3 months.
  • Use any seasonal vegetables on hand.
  • Add pasta or rice for a heartier soup.
