  • 2 pounds Ground Beef opt for 80/20 or leaner for the best flavor
  • 1 pound Ground Lamb optional, provides depth of flavor
  • 1 medium Onion (Shredded) ensures even flavor distribution
For the Grain Base
  • 1 cup Bulgur Wheat fine or medium grind, soak before mixing
For the Layered Flavor
  • cup Pine Nuts adds crunch and nutty sweetness
  • ½ cup Ghee (or Clarified Butter) use for greasing and layering
For Seasoning
  • 1 teaspoon Cinnamon adjust to taste
  • 1 teaspoon Black Pepper adjust to taste
  • 1 teaspoon Salt adjust to taste

Method
 

Preparation Steps
  1. Soak 1 cup of bulgur wheat in 2 cups of boiling water for about 10 minutes.
  2. In a large mixing bowl, combine 2 pounds of ground beef and lamb (if using), spices, shredded onion, and soaked bulgur.
  3. Heat a skillet and cook 1 pound of ground beef until browned. Add ⅓ cup of pine nuts and cook for an additional minute.
  4. Preheat oven to 350°F. Grease the baking dish with half of the melted ghee. Layer the meat and pine nut mixture as instructed.
  5. Score the top in a diamond pattern and brush with the remaining ghee before baking.
  6. Bake for 30 minutes, then switch to broil for 3 minutes to achieve a crispy finish.
  7. Let cool slightly before serving, and cut into diamond-shaped pieces.
