Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can 15 ounces diced tomatoes, undrained
  • 1 can 8 ounces tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1/2 cup milk
  • 1/2 cup breadcrumbs

Method
 

  1. Preheat the oven to 350°F.
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender, about 5-7 minutes. Drain any excess fat.
  3. Stir in the diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  4. Add the cooked macaroni, mixed vegetables, milk, and half of the cheddar cheese to the skillet. Mix well until everything is combined.
  5. Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the remaining cheddar cheese on top, followed by the breadcrumbs.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
