Method
- Heat oil in a large pot. Brown chicken pieces and set aside.
- Sauté onion and garlic until softened.
- Stir in flour, then add carrots, celery, potatoes, and seasonings.
- Return chicken to pot and pour in broth.
- Bring to a boil, then simmer for 30 minutes until everything is tender.
- Serve warm with crusty bread.
Notes
- For a thicker stew, mash a few potato chunks near the end of cooking.
