Ingredients
  

  • 1 ½ lbs boneless chicken thighs cubed
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 2 carrots sliced
  • 2 potatoes diced
  • 1 cup chopped celery
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp flour optional, for thickening

Method
 

  1. Heat oil in a large pot. Brown chicken pieces and set aside.
  2. Sauté onion and garlic until softened.
  3. Stir in flour, then add carrots, celery, potatoes, and seasonings.
  4. Return chicken to pot and pour in broth.
  5. Bring to a boil, then simmer for 30 minutes until everything is tender.
  6. Serve warm with crusty bread.

Notes

  • For a thicker stew, mash a few potato chunks near the end of cooking.
