Healthy Spinach Feta Pinwheels

Flaky, buttery, and packed with Mediterranean flavors, these Spinach and Feta Puff Pastry Spirals are the perfect savory snack or appetizer. Ingredients
  

  • 1 sheet puff pastry thawed
  • 1 egg
  • 1 tablespoon water
  • ½ cup crumbled feta cheese
  • ¼ cup grated mozzarella cheese
  • 1 green onion finely chopped
  • ½ teaspoon garlic salt
  • A pinch of freshly grated nutmeg
  • 10 ounces frozen chopped spinach thawed and squeezed dry

Method
 

  1. Prepare the Egg WashIn a small bowl, whisk together the egg and water. Set aside.
  2. Mix the FillingIn another bowl, combine the crumbled feta, grated mozzarella, chopped green onion, garlic salt, and nutmeg.
  3. Roll Out the Puff PastryOn a lightly floured surface, unfold the thawed puff pastry and roll it out slightly to smooth any creases.
  4. Assemble the SpiralsBrush the entire surface of the pastry with the egg wash. Evenly spread the cheese mixture over it, leaving a 1-inch border on one short side. Scatter the drained spinach evenly on top.
  5. Roll and SliceStarting from the opposite short side, tightly roll the pastry into a log. Press the edge to seal. Using a sharp knife, cut the log into ½-inch slices.
  6. Chill Before BakingArrange the slices on a parchment-lined baking sheet and refrigerate for about 15 minutes to help them hold their shape.
  7. Bake to Golden PerfectionPreheat the oven to 400°F (200°C). Brush the tops of the pinwheels with the remaining egg wash. Bake for 15 minutes, or until golden brown and puffed.
  8. Serve and EnjoyLet them cool slightly before serving. Enjoy warm or at room temperature.

Notes

  • For a crispier texture, bake on a wire rack placed over the baking sheet.
  • To make ahead, assemble the spirals, freeze them on a tray, and bake straight from frozen, adding a few extra minutes to the cooking time.
  • Swap mozzarella for Parmesan or goat cheese for a different flavor profile.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in an oven or air fryer to maintain crispiness.
