Step-by-Step Instructions
  1. In a large pot, pour in 8 cups of chicken broth and heat over medium heat until simmering.
  2. Add 1 pound of diced chicken breast, 2 tablespoons of sliced fresh ginger, 4 cloves of minced garlic, 2 chopped carrots, 2 diced celery stalks, and 1 diced onion. Stir and simmer for 20 minutes.
  3. Cook 8 ounces of noodles according to package instructions, usually 8-10 minutes. Drain the noodles.
  4. Add the drained noodles to the soup and stir to combine. Let it simmer for another 3-5 minutes.
  5. Season with salt and pepper to taste. Serve garnished with fresh herbs if desired.
