Ingredients
  

  • 2 cups cooked chicken breast shredded
  • 1/2 cup pineapple chunks fresh or canned, drained
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1/2 cup gluten-free mayo
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Chopped green onions or cilantro for garnish

Method
 

  1. In a large bowl, combine chicken, pineapple, celery, and red onion.
  2. In a separate bowl, whisk together mayo, lime juice, salt, and pepper.
