Ingredients
  

  • 1 whole chicken spatchcocked or 4 bone-in chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 2 tablespoons paprika preferably smoked
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes adjust to taste
  • 1 teaspoon cayenne pepper optional for extra heat
  • 1 tablespoon honey optional, for slight sweetness

Method
 

  1. Prepare the Marinade – In a bowl, whisk together olive oil, lemon juice, red wine vinegar, paprika, garlic powder, onion powder, oregano, thyme, salt, black pepper, red pepper flakes, and cayenne pepper.
  2. Marinate the Chicken – Rub the marinade all over the chicken, ensuring it's well-coated. Let it marinate for at least 1 hour (or overnight for deeper flavor).
  3. Preheat the Grill – Set your grill to medium-high heat (375-400°F / 190-200°C). Lightly oil the grates.
  4. Grill the Chicken – Place the chicken skin-side down on the grill. Cook for about 5-7 minutes per side, then lower the heat and continue grilling for 25-30 minutes, flipping occasionally, until the internal temperature reaches 165°F (75°C).
  5. Rest & Serve – Let the chicken rest for 5 minutes before slicing. Serve with lemon wedges and your favorite sides.

Notes

  • For a more intense flavor, marinate the chicken overnight.
  • Adjust the spice level by adding more or less cayenne pepper.
  • Use a meat thermometer to ensure the chicken is fully cooked but still juicy.
  • No grill? You can roast the chicken in the oven at 400°F (200°C) for 35-40 minutes
