Method
 

Cooking Steps
  1. Preheat your grill to medium-high heat, around 400°F (200°C). Brush corn, halved peaches, and onion with olive oil.
  2. Grill corn, peaches, and onion for about 5-10 minutes until char marks appear, turning occasionally.
  3. In a skillet, heat remaining olive oil and sauté prosciutto for about 4 minutes until golden brown and crisp.
  4. Cut corn kernels off the cob and chop grilled peaches and onions into bite-sized pieces into a mixing bowl.
  5. Add prosciutto and parsley into the bowl. Drizzle with honey vinaigrette, sprinkle with salt and pepper, and toss gently.
  6. Lay lettuce on a platter, spoon salad mixture over it, and serve immediately.
