  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 4 strips of cooked bacon crumbled
  • 1/2 cup crumbled blue cheese or feta cheese
  • 1/4 cup Caesar dressing store-bought or homemade
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your grill to medium-high heat. In a small bowl, mix together olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture over the chicken breasts.
  2. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
  3. In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, avocado, crumbled bacon, and blue cheese.
  4. Slice the grilled chicken and add it to the salad. Drizzle with Caesar dressing and toss gently to combine.
  5. Garnish with fresh parsley before serving.
