Ingredients
  

For the Meatballs
  • 1 lb Ground Turkey or ground chicken
  • 1 cup Breadcrumbs gluten-free if needed
  • 1/2 cup Grated Parmesan Cheese or nutritional yeast for dairy-free
  • 1/4 cup Fresh Parsley or fresh dill
  • 2 cloves Minced Garlic no substitutes
  • 1 tsp Dried Oregano or Italian seasoning
  • to taste tsp Salt
  • to taste tsp Pepper
  • 1 large Egg for binding
  • 2 tbsp Olive Oil or canola oil
For the Lemon Herb Rice
  • 1 cup Long-Grain Rice or brown rice with adjusted cooking time
  • 2 cups Chicken Broth or vegetable broth for vegetarian
  • 1 tbsp Lemon Zest
  • 2 tbsp Lemon Juice
  • 1/4 cup Fresh Dill or fresh mint

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine ground turkey, breadcrumbs, grated Parmesan cheese, chopped fresh parsley, minced garlic, dried oregano, salt, pepper, and a beaten egg. Mix until just combined, shape into 1-inch meatballs.
Cooking Meatballs
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add meatballs and cook for about 10-12 minutes until golden brown and cooked through.
Rice Preparation
  1. In a medium saucepan, heat 1 tablespoon of olive oil. Add 1 cup of long-grain rice and toast for 2-3 minutes until lightly golden and aromatic.
Cooking Rice
  1. Add 2 cups of chicken broth, lemon zest, and lemon juice to the toasted rice. Bring to a boil, then reduce heat and cover to simmer for 15-20 minutes.
Finalizing Rice
  1. Remove rice from heat and let it sit covered for 5 minutes. Fluff with a fork and mix in fresh dill, adjusting seasoning to taste.
Serving
  1. Serve lemon herb rice as a bed for turkey meatballs, garnished with additional fresh dill or parsley.
