Ingredients
  

For the Chicken Marinade
  • 1/4 cup Olive Oil or avocado oil for a unique twist
  • 1/4 cup Lemon Juice fresh juice is best
  • 3 cloves Garlic minced, fresh cloves
  • 1 tablespoon Oregano dried for convenience
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Tzatziki
  • 1 cup Greek Yogurt or dairy-free yogurt
  • 1/2 cup Cucumber grated and drained
  • 1 clove Garlic minced
  • 1 tablespoon Lemon Juice fresh juice preferred
  • 1 tablespoon Dill fresh for better flavor
  • 1/2 teaspoon Salt adjust to taste
For the Bowl Base
  • 2 cups Rice or Quinoa or cauliflower rice for lower carb
For the Fresh Veggies
  • 1 cup Tomatoes diced, ripe heirloom preferred
  • 1 cup Cucumbers sliced, English preferred
  • 1/2 cup Red Onion sliced, soak in water to mellow
Optional Ingredients
  • 1/2 cup Olives Kalamata for authentic flavor
  • 1/4 cup Feta Cheese omit for dairy-free option

Method
 

Step-by-Step Instructions
  1. Marinate Chicken: Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Pound chicken breasts to about 1/2 inch thickness, marinate for at least 30 minutes.
  2. Make Tzatziki: Mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, and salt until smooth. Refrigerate to meld flavors.
  3. Prepare Rice or Quinoa: Cook according to package instructions and set aside.
  4. Cook Chicken: Preheat air fryer to 380°F. Cook marinated chicken for 7 minutes on one side and 3-4 minutes on the other until cooked through.
  5. Assemble Bowls: Layer rice or quinoa, top with chicken, fresh veggies, tzatziki, and extra olive oil and lemon juice.
