- Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a mixing bowl, combine cold butter with granulated and brown sugar, mixing until clumpy, then fluffy.
- Incorporate egg yolks one at a time and mix in vanilla extract until well combined.
- Whisk together baking soda, baking powder, and sea salt separately, then gradually add to wet ingredients.
- Fold in chocolate chips and mini marshmallows until evenly distributed.
- Melt butter, dip graham crackers in it, and place them on your lined baking sheets.
- Form cookies with a scoop, place regular marshmallow inside, cover with more dough on top of graham cracker.
- Bake for 12-14 minutes, rotating sheets halfway through.
- Gently use a round cookie cutter to shape cookies right after baking.
