Cookie Preparation
- Cream together the unsalted butter, granulated sugar, and brown sugar for about 5 minutes.
- Add eggs one at a time and then vanilla extract, mixing after each addition.
- In a separate bowl, sift together the flour, baking soda, baking powder, cornstarch, and salt, then gradually mix into the wet ingredients.
- Fold in chocolate chips and Easter sprinkles until evenly distributed.
- Portion the dough into 8 rounds, place a Peep in each, and wrap dough around to encase.
- Chill the dough balls for at least 2 hours.
- Preheat the oven to 375°F. Bake cookies for 14-16 minutes.
- Let the cookies cool on the tray for 20-30 minutes before transferring to a wire rack.
