Cookie Dough
  • 1 cup unsalted butter Ensure at room temperature.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs Use room temperature eggs for best results.
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 3 cups all-purpose flour
Filling
  • 1 cup semi-sweet chocolate chips Can swap for white or milk chocolate.
  • 1 package Peep Brand Easter Marshmallows Can substitute with large flavored marshmallows.
  • 1/2 cup Easter sprinkles

Method
 

Cookie Preparation
  1. Cream together the unsalted butter, granulated sugar, and brown sugar for about 5 minutes.
  2. Add eggs one at a time and then vanilla extract, mixing after each addition.
  3. In a separate bowl, sift together the flour, baking soda, baking powder, cornstarch, and salt, then gradually mix into the wet ingredients.
  4. Fold in chocolate chips and Easter sprinkles until evenly distributed.
  5. Portion the dough into 8 rounds, place a Peep in each, and wrap dough around to encase.
  6. Chill the dough balls for at least 2 hours.
  7. Preheat the oven to 375°F. Bake cookies for 14-16 minutes.
  8. Let the cookies cool on the tray for 20-30 minutes before transferring to a wire rack.
