Method
- Boil potatoes until fork tender, then slice
- In a skillet, cook bacon until crisp, then remove
- Sauté onions in bacon grease, then add vinegar, mustard, sugar, salt, and pepper
- Stir in potatoes and bacon, tossing to coat in warm dressing
- Sprinkle with parsley and serve warm
Notes
- Use white or yellow potatoes if preferred
- Add chopped hard-boiled eggs for richness
