Ingredients
  

  • red potatoes
  • bacon chopped
  • onion finely diced
  • apple cider vinegar
  • dijon mustard
  • sugar
  • salt
  • pepper
  • fresh parsley chopped

Method
 

  1. Boil potatoes until fork tender, then slice
  2. In a skillet, cook bacon until crisp, then remove
  3. Sauté onions in bacon grease, then add vinegar, mustard, sugar, salt, and pepper
  4. Stir in potatoes and bacon, tossing to coat in warm dressing
  5. Sprinkle with parsley and serve warm

Notes

  • Use white or yellow potatoes if preferred
  • Add chopped hard-boiled eggs for richness
  • Tastes great warm or at room temperature
