  • 3-4 cloves Garlic Minced.
For the Brightness
  • 1 unit Lemon Juice and zest.

Method
 

Step-by-Step Instructions
  1. Spiralize your medium zucchini into noodle shapes using a spiralizer or julienne peeler. Set aside in a colander to drain excess moisture.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  3. Add 3-4 minced garlic cloves to the skillet and sauté for about 30 seconds until fragrant.
  4. Add the peeled and deveined medium shrimp to the skillet. Cook for 2-3 minutes on each side until shrimp turn pink and opaque.
  5. Gently add the prepared zucchini noodles to the skillet, tossing them with the shrimp and garlic. Sauté for an additional 2 minutes.
  6. Remove from heat and squeeze in the juice of one lemon along with lemon zest. Add red pepper flakes, salt, and pepper to taste.
