Ingredients

  • 8 oz fettuccine or spaghetti
  • 2 tbsp unsalted butter
  • 4 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pasta water reserved
  • Salt and black pepper to taste
  • 1/4 tsp garlic powder optional, for extra flavor
  • Fresh chopped parsley for garnishAdditional Parmesan, for serving

Method

  1. Cook pasta: In a large pot of salted water, cook the pasta according to package directions until al dente. Reserve 1/4 cup of the pasta water, then drain the rest.
  2. Sauté garlic: In a large skillet over medium heat, melt butter. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Make the sauce: Pour in the heavy cream and stir. Let it simmer for 2–3 minutes, then whisk in Parmesan cheese until melted and smooth.
  4. Combine: Add cooked pasta to the skillet, tossing to coat. Use reserved pasta water a little at a time until the sauce reaches your desired consistency.
  5. Season and serve: Season with salt, pepper, and garlic powder if using. Garnish with parsley and extra Parmesan. Serve immediately.
  6.

Notes

  • Make it a full meal by adding grilled chicken, shrimp, or sautéed mushrooms.
  • Use freshly grated Parmesan for the best melt and flavor.
  • For a lighter option, you can substitute half-and-half or whole milk for the cream, though it may not be as rich.
  • Double the garlic if you’re a garlic lover!
