  • 4 tablespoons Butter melted
  • 1 cup Chicken Stock
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Ground Black Pepper
For the Cheesy Topping
  • 1 cup Shredded Mozzarella Cheese optional
  • 1/2 cup Parmesan Cheese optional
  • 2 tablespoons Fresh Parsley chopped, for garnish

Step-by-Step Instructions
  1. Begin by combining the 1-inch chunks of potatoes and chopped onion in your slow cooker. Drizzle with olive oil, and sprinkle with kosher salt, black pepper, and paprika. Toss until all the vegetables are evenly coated.
  2. Next, place the boneless skinless chicken breasts on top of the seasoned potatoes and onions. Generously season the chicken with extra salt and pepper.
  3. In a separate bowl, whisk together melted butter, Parmesan cheese, garlic powder, onion powder, black pepper, and chicken stock until well blended. Pour the sauce evenly over the chicken and vegetables.
  4. Cover your slow cooker and set it to cook on High for 4.5 hours or on Low for 6 hours.
  5. During the last 20 minutes of cooking, sprinkle shredded mozzarella and optional Parmesan cheese over the top of the chicken and potatoes.
  6. Once cooking is complete, gently stir the Garlic Parmesan Chicken & Potatoes to mix in the melted cheese. Serve hot, garnished with freshly chopped parsley.
